Ingredients
- 2 medium apples (peeled, cored, and diced)
- 200 g (1 ½ cups) all-purpose flour (or gluten-free flour blend)
- 2 tsp baking powder
- ½ tsp cinnamon
- ¼ tsp nutmeg
- Pinch of salt
- 2 large eggs (or flax eggs for vegan)
- 100 g (½ cup) coconut sugar or brown sugar
- 80 ml (⅓ cup) coconut oil or melted butter
- 120 ml (½ cup) plant-based milk (almond, oat, or dairy)
- 2 tbsp Sea Moss Gel (neutral, flavorless)
- 1 tsp vanilla extract
- Chopped nuts (optional, e.g. pistachios, walnuts, almonds)
Instructions
1. Preheat oven:
Set oven to 180°C (350°F).
Line a round cake tin with parchment paper.
2. Prepare dry ingredients:
In a large bowl, mix flour, baking powder, cinnamon, nutmeg, and salt.
3. Prepare wet ingredients:
In another bowl, whisk eggs, sugar, and vanilla until fluffy.
Add melted coconut oil (or butter), plant-based milk, and Sea Moss Gel. Mix well.
4. Combine:
Gradually add dry ingredients to wet mixture, stirring until just combined.
Fold in diced apples (and nuts if using).
5. Bake:
Pour batter into the prepared tin.
Bake for 35–40 minutes, until a toothpick inserted in the center comes out clean.
6. Cool & serve:
Allow cake to cool before slicing.
Optionally, top with a light glaze, nut crumble, or dust with cinnamon.
